Next we need cashew paste to thicken the gravy and that also makes the paneer butter masala very creamy and rich. Apart from these two ingredients you need turmeric powder,chili powder and garam masala powder, day to day ingredients and nothing fancier, but the finished paneer butter masala will be lip smacking good and exactly the same like what you get in restaurants.
Paneer butter masala is a very mildly spiced gravy with slight sweetness, that comes from cashew paste.

Few tips to make perfect paneer butter masala.
1. Make sure to blanch and peel the tomatoes before you puree them. Blanching the tomatoes imparts a beautiful color and the puree will be smooth resulting in very smooth gravy.
2. Make sure you soak the cashews for at least 15 minutes in warm milk. The cashew paste should e very smooth, using milk for soaking cashews will yield in very smooth and rich paneer butter masala gravy.
3. Make sure the paneer is defrosted well before adding to the gravy. If needed you can keep the paneer in hot water for 10 minutes. This ensures that the paneer remains soft.
4. Be sure to add the garam masala at the last as mentioned in the recipe, this will ensure the flavor stays potent.

Step by step paneer butter masala recipe:
1. Soak 12-15 cashews in 1/2 cup hot milk for 15-20 minutes.

2. Grind the soaked cashews to a smooth paste along with milk.

3. Boil plenty of water in a vessel and add the tomatoes. Add sugar and blanch for 4-5 minutes, till the tomatoes turn soft.

4. Let cool slightly and peel the tomatoes.

5. Heat a pan and add 1 teaspoon butter. Add the coarsely chopped onion and saute for 3-4 minutes.

6. Puree the sauteed onion-blanched tomatoes without adding water. The puree should be smooth.

7. In the same pan used for sauteing onion, add 2 tablespoons butter. Add a bay leaf and saute for 1-2 minutes.

8. Add crushed ginger-garlic-green chili and saute well till the raw smell goes off.

9. Add the onion-tomato puree and mix well. Stir and cook for few minutes.

10. Add coriander powder turmeric powder and chili powder. Mix well and cook till the to tomato puree thickens.

12. Add 1/3 cup water. Cook for 7-8 minutes till the gravy turns thick and smooth.

15. Crush the kasuri methi well and add to the gravy. Switch off the flame. Serve paneer butter masala with butter naan/kulcha/jeera rice.

1. Use oil  in place of butter
2. Use cubed tofu (soy paneer) in place of dairy paneer.

Paneer butter masala, rich and tasty side dish paneer cubes simmered in rich tomato cashew based gravy. Best served with naan/ jeera rice.
Ingredients
  • 200 grams paneer, cubed.
  • 4 large tomatoes
  • 1 medium onion
  • 12-15 cashews soaked in 1/2 cup milk
  • 1 green chili
  • 1/2 inch ginger piece
  • 2-3 cloves garlic
  • 1 bay leaf
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon coriander powder(optional)
  • 12 teaspoon turmeric powder
  • 1/2 teaspoon garam masala powder
  • 1/4 teaspoon kauri methi
  • 1/2 teaspoon sugar
  • Salt
  • 1 teaspoon + 2 tablespoons butter
Instructions
  1. Soak cashews in milk and grind to a smooth paste. Coarsely grind or crush the ginger-garlic ad green chili.
  2. Blanch and peel the tomatoes.
  3. Chop the onion coarsely. Heat 1 teaspoon butter in a pan and saute the onions.
  4. Puree the sauteed onions along with peeled tomatoes.
  5. Heat 2 tablespoons butter in a pan. Add bay leaf and saute.
  6. Add ginger-garlic-green chili and saute till the raw smell goes off.
  7. Add onion-tomato puree and mix well. Cook for 3-4 minutes till the puree slightly thickens.
  8. Add cashew paste and mix well.
  9. Add salt and sugar. Mix well and cook for few minutes.
  10. Add garam masala powder and mix well.
  11. Add the cubed paneer and simmer for 3-4 minutes.
  12. Add crushed kasuri methi and switch off the flame. Serve paneer butter masala hot.
Notes
1. Coriander powder does leave a sharp taste, you can leave it if you do not prefer.[br]2. Along with bay leaf you can add few cloves and a cardamom.[br]3. You can add fresh cream if needed towards the end.
